Green Smoothie Recipe a la Farmer Market Wednesdays

Tired of eating salad to get your greens in?  Check out these green smoothie recipes.  As a direct result of our Farmer Market Wednesdays, we have shifted into drinking more green smoothies to use up our fresh, local and organic chard, collards and kale!  Thank you Farmer Market Wednesdays for the shift and boost in healthier meal choices.

There are many recipes included in the awesome book “Green Smoothie Revolution” by Victoria Boutenko in addition to a lot of great knowledge.  In my read, I learned about just how important and nutrient dense greens are.  To quote Victoria:

“In fact, green leaves are as essential for human existence as water, air, and sunlight. I have conducted a lot of research and found that the nutritional composition of greens matches human nutritional needs amazingly well.  Greens contain all the essential minerals, vitamins, and even amino acids that humans need for optimal health.  The only nutrient not found in greens is vitamin B12.”

And per the USDA:

“Over 50 percent of Americans are deficient in the five most important nutrients and over 80 percent of Americans are deficient in one or more essential nutrients.”

I found it interesting to learn that a lack of vitamin D, calcium and other essential nutrients contribute to underdeveloped facial bones in many people, which results in smaller dental arches and consequently tooth crowding.  Did you have braces at any point in your life?  Makes one wonder if you were to have more greens if it could have been a different story….

Vitamin K is important for cartilage development in our ears and everywhere else in our body.  Vitamin K deficiency has been linked to the following disorder:

  •     skin cancer
  •     liver cancer
  •     heavy menstrual bleeding
  •     nose bleeds
  •     hemorrhaging
  •     easy bruising
  •     osteoporosis
  •     hematomas


Rise above the statistics, take your health in your blender, and fit in more greens.  I like to make a green smoothie to start my day.  Don’t limit yourself to the recipes shared below- get adventurous!  Often, I put in some amount of green and then put as many fruits as I please depending on what’s stocked in my fridge.  Instead of eating your greens, just drink ’em… along with delicious and nutritious fruits.  Happy blending.

  • 2 bananas
  • 1 Gala apple
  • 1 Bosc pear
  • 1 cup kale
  • 1/4 cup water

Summer Splendor Smoothie by Sergei Boutenko

  • 4 leaves chard
  • 3 stalks celery
  • 1 bunch fresh parsley
  • 6 apricots
  • 3 peaches
  • 1/2 vanilla bean

Satisfying Smoothie by Victoria Boutenko

  • 1 bunch kale
  • 1 bunch chard
  • 3 red bell peppers, with seeds, stems removed
  • 3 cups water

Coco-Nash Smoothie by Michele Moisan

  • 2 cups spinach
  • 1 avocado
  • 1 coconut, meat and water
  • 1/2 teaspoon vanilla
